White chocolate fudge with pineapple and roasted coconut chips

Ingredients:

Recipe for 30 pcs

2.5 dl sugar

2.5 dl cream

1 dl pineapple juice

1 dl light syrup

100 g white chocolate

50 g Butter

1 dl dried pineapple

1 dl roasted coconut chips Simply Salted

 

How to do it:

Mix sugar, cream, pineapple juice and syrup in a saucepan. Boil while stirring until the sugar dissolves. Lower to medium heat and simmer to a temperature of 118°C Tighten the side and allow to cool slightly. Chop the chocolate. Add the chocolate and butter, stir until everything dissolves, about 3 minutes. Pour the batter into a form with baking paper, about 15x20 cm. Sprinkle over pineapple and coconut chips. Allow the fudge to solidify in room temperature, at least 6 hours. Cut into 30 pieces.
