5 tablespoons coconut oil
2 dl dried pineapple
2 dl coconut chips Original Flavor
1.5 dl room, light
3 tablespoons of coconut water
3 gelatin leaf
Here's how to do it:
1. Melt the coconut oil.
2. Mix the oil with coconut chips and half of the pineapple. Blend to a fine paste. Add the rest of the pineapple and mix gently so that you remain some larger pieces. Spread batter into a mold, press firmly and cool completely.
3. Place the gelatine leaves in cold water. In the meantime, heat the coconut water and melt the leaves in it under stirring. Once the gelatin has dissolved, mix coconut water with the gelatin in the rum and pour over the batter. Cool down completely when the room mixture solidified completely, divide the cake into oblong bars and garnish with additional coconut chips.
If you want to make a "virgin" version, replace the rum with coconut water.
