Coconut pie with mango and pear
A pie with taste of the South Sea; coconut, mango and pears. The recipe gives 8 pieces.
125 g cold butter
1 cup sugar
1.5 ml flour
1.5 dl coconut chips
2 mango fruit
1 tablespoon of sugar
How to do it:
Heat the oven to 200 degrees Celsius.
Cut the butter into dice and mix all the ingredients into a gritty mass.
Place half of the crumbs in a pie shape, about 24 cm in diameter, and gently push out the dough.
Bake 6-7 minutes. Remove the pie and increase the oven temperature to 225 degrees.
Peel the pears and mango and remove the seeds, cut the fruit into pieces.
Put the slices in the pie and sprinkle over the sugar and the rest of the dough, then bake for another 20-25 minutes at the bottom of the oven.
Serve with vanilla ice cream or mango sorbet. Vanilla sauce, vanilla whip or whipped cream is also good!
