Coconut parfait

A creamy parfait with a nice taste of coconut. Impress the guests with this coconut parfait!


2 egg yolks

1 dl icing sugar

zest from 1 lime

2,5 dl light coconut milk

3 dl whipped cream

1 dl coconut chips


How to do it:

Stir egg yolks, icing sugar, lime zest and coconut milk. Whip the cream. Stir the cream and coconut into the eggshell. Pour the batter into a bowl and cover with plastic foil. Freeze for at least 4 hours. Bring the parfait and leave it in the fridge for about 30 minutes before serving.
